Roasted Chicken Salad with Dijon and Tarragon- Being classically French trained, the flavors in this salad feel like home. Many chicken salad recipes that I've seen rely too heavily on dressing and overly powerful seasoning, where as this one allows the taste of the chicken to be the center stage star.
The green freshness of the tarragon and chive sings alongside the tangy bite of Dijon, with just enough mayonnaise to bring some creamy texture to the mix. When your teeth crunch into the diced bits of onion, releasing sweetness, the crisp celery is also there to cleanse your palate, before it becomes overwhelmed. Try it out, I think that you'll agree that this is a truly sublime version of chicken salad.

This recipe is so super simple, just a little bit of knife work, mixing it up, and "Bob's your uncle!", (who's Bob, he's not my uncle. sorry...), make a sandwich, pile it onto some fresh greens, or just eat it with a fork, it's that good!

Ingredients For Chicken Salad
- 10 ounces roasted chicken cut into bit sized chunks could be from our recipe or a store bought rotisserie chicken
- 1 cup mayonnaise we love Dukes mayonnaise the full calorie or light version
- ¼ cup Dijon mustard
- 3 tbsp sweet onion small diced
- 4 tbsp celery small diced
- 3 tbsp fresh tarragon chopped
- 1 tbsp fresh chives chopped
- salt and black pepper to taste
Instructions For Chicken Salad

Chop your chicken into desired size pieces. Here they are shown as being about one inch, but if you would like a thicker texture, go larger.

Once everything is chopped and measured, just put it in a bowl and mix it up!

Equipment
- 1 Mixing Bowl
- 1 mixing spoon
- 1 measuring spoons
- 1 set of measuring cups
- 1 Kitchen knife
- 1 Cutting Board
Ingredients
- 10 ounces roasted chicken cut into bit sized chunks could be from our recipe or a store bought rotisserie chicken
- 1 cup mayonnaise we love Dukes mayonnaise the full calorie or light version
- ¼ cup Dijon mustard
- 3 tablespoon sweet onion small diced
- 4 tablespoon celery small diced
- 3 tablespoon fresh tarragon chopped
- 1 tablespoon fresh chives chopped
- salt and black pepper to taste
Instructions
- chop the chicken into bite sized chucks (the size of the pieces is based on your preference)
- add chicken to the mixing bowl
- dice the celery and onion
- chop the herbs
- measure the mayonnaise and mustard
- add all ingredients to the mixing bowl with the chicken
- season to taste with salt and black pepper
- mix together making sure to evenly combine the ingredients, put it in a storage container and place in the refrigerator to chill
- use the chicken salad to make a sandwich on desired bread or serve with lettuce
Storage
In a tightly sealed container, this will stay fresh for 4 days under refrigeration.
